What happens if you don’t let dough rise long enough?

The bubbles of gas are trapped by the gluten strands. The bubbles hold the gluten in place while it is baked. If you don’t allow the bread to rise, this process will not happen. If you bake the bread right away after making the dough, the heat of the oven will kill off the yeast before it can make the bubbles.
