A pressure fryer is a commercial unit that works in a similar manner as a residential pressure cooker (see note below). Rather than bringing water up to a high temperature under pressure, oil is brought up to well over 320° F and placed under pressure to deliver a perfectly cooked, juicy fried recipe.
