Score and Snap. Use a utility knife to cut any caulking or adhesive joining the bottom of the countertops to the cabinetry. Carefully remove the granite backsplashes, if applicable, by cutting the caulking in the joints that meet the countertop and against the wall. Carefully pry them off with a small pry bar.
